Mozzarella di Bufala: not only a dairy product, but also an emotional bond with the home soil! The migrant left the home soil taking with them the knowledge of flavors, handed down from one generation to another. This type of activity has the goal to acknowledge how a farming tradition made its way to become a food innovation famous all over the world, but still it is a vivid memory in the soul who left for a foreign country.

Today using fodders from local production to feed the herd and making sure that it is controlled by an agriculture technician, are among the winning choices that can always secure a high quality milk utilized to produce mozzarella or other types of cheese.

In the first part of the tour you are going to visit the farm, walking trough the barns to really learn about Mediterranean Bufala and the relevance of its genealogy, where you can also stay close with the animals, feeding them with some fodder.

After that, we will guide you to see the lab where you can take part of the workshop. Here you will learn some technique to produce mozzarella and cheese, then you can try to replicate these techniques to make your own dairy product and you can also take it away!

In the last section of the tour you will take part in a typical “aperitivo” on the panoramic terraces of the farm or inside a themed tasting room. This moment of relax will be accompanied by a master taste, who will guide you during the tasting, showing the qualities of the cheese, some possible pairing or culinary uses and also some curiosity from the dairy world.

The tasting based on fresh cheeses, including the inevitable hand-cut mozzarella and ricotta, mature Bufala cheeses accompanied by taralli from Campania and Cilento bread, paired with 0 km Cilento wine, is the direct bond between the man and their land, where the roots remain strong.
